What is Pig in Bag?
Its the name of our company and it is also part of our smoking process. Within the last hour of meat being smoked to perfection, a paper bag is utilized to "break down" the meat which gives it a very tender consisitancy.
Government Agency Approved Catering:
We are approved by Burlington Northern Santa Fe (BNSF) Railroad through "Everify"
which means we are able to cater to any BNSF event in the U.S.
We are also approved by "Sams.gov" which allows us to bid and receive government contracts such as military and FEMA.
For example: In the event of disasters, FEMA can contact approved catering vendors to verify background checks and quality standards to approve catering services.
